Mmm, Pizza!

I'm a total pizza snob. I love pizza but only really good pizza, Boston pizza. When I'm craving those flavors I really don't want to waste the fat and carbs on Georgia pizza (gag.) I came up with this recipe as a delectable alternative. It's flavorful and healthy, it really holds me over until I can get back to Boston for my pizza fix.

Mushrooms Margherita
Serves 1

two large portobello mushrooms
two or three vine-ripened tomatoes, sliced
fresh basil leaves
your favorite cheese, I like goat cheese or fresh mozzarella
salt, pepper, olive oil and crushed red pepper flakes (optional if you don't dig spicy foods)

Remove the stems from the mushrooms and carefully scrape out the dark brown gills. Drizzle caps with olive oil and sprinkle with salt, pepper and red pepper flakes. Bake in a 400 oven for 15 minutes. Remove from oven and drain away any mushroom juices that has collected in the caps. Top caps with basil leaves, tomato slices and cheese. Broil until tops are golden brown and bubbly. Devour.
