Must Try Recipe

It feels like it's been so long since I sat down to post. My work schedule has been nutso, but it's finally settled down so hopefully I can finish the bunch of drafts that have been waiting on me.

Tuesday evening I made Beef and Bok Choy Hot Pot and oh my goodness the flavors were amazing, hot, sour and tangy all at the same time. I love bok choy and this recipe has inspired me to find more recipes that use this lovely, crisp cabbage.

I followed the suggestions from the reviewers that said to use more broth and less water than the recipe states. I used 2 cups chicken broth and 1 cup of water. I don't care much for the flavor of beef broth and I certainly didn't miss it in the recipe. Other tweaks were twice the garlic and quadruple the amount of ginger than the recipe called for. There can never be too much ginger as far as I'm concerned. I was nervous about the cinnamon but after cooking for a couple of hours it mellowed out to a nice warmth but didn't overtake the dish. This Hot Pot is perfect for cold nights, it's warming and satisfying. It was really good left over, too. Definitely a keeper, I really hope you give it a try.
