Monday Weigh-In

I was so shocked to see this number on the scale this morning that I weighed myself three times and then ran for the camera. Pardon me while I hit caps lock: I LOST FIFTY POUNDS! This is a very good day. I'm actually starting to believe that in the not too distant future that number on the scale will say "199."

I wanted to come and post this straight away but I had to get to the gym. I feel like I have a bit of momentum going and I don't want to break it. I did 30 minutes on the elliptical trainer and then had an orientation on all the strength training machines. I did a set of 15 on each one and the trainer marked a card with all the settings and weights so that I can refer back to them next time. I'm heading back tomorrow for more cardio and a set on the leg machines.

We had snow here in Georgia yesterday, it was cold and wet and miserable. My poor daffodils and hellebore are pretty much devastated. Regardless of the snow, I still made Spring Barley Risotto for Sunday dinner as planned. This recipe is a keeper! I added lemon juice with the wine and lemon zest with the mint at the end, but otherwise I followed the recipe to the letter. You must try it, barley makes the most delicious risotto and it's so easy because it doesn't require the same tending that traditional dishes using arborio rice does. The recipe makes four servings but I'm lucky that I got one portion put aside for my supper at work Wednesday. So, so moreish.

I'm off to make sweet, sweet love to my juicer now. Have a fabulous Monday!
