Marinated Yellowfin Tuna on the Grill with Summer Veggies
Two yellowfin tuna steaks (frozen ones from Trader Joe's are awesome!)
2 sweet bell peppers
1 large zucchini
1 large summer squash
1/2 large red onion
Trader Ming's Soyaki marinade
Cut veggies into 3-inch strips, cut the onion into thin half moons then place in a zipper bag . Pour in enough marinade to coat well. Place fish into another zipper bag with enough marinade to coat well. Refrigerate both for 1 hour, turning once half way. Remove bags from fridge to get the chill off while you prepare grill. Preheat grill and grill basket on medium-high heat. Be sure to clean and oil grates well so fish won't stick. Cook veggies in grill basket, stirring occasionally for 12 minutes before putting fish on. Place fish over direct heat, cook for 4 minutes with cover closed. Turn and cook another 3-4 minutes with cover closed. Remove fish and veggies to a platter, garnish with some fresh chives. Devour!
Steamed jasmine rice would round out the meal nicely and make it more filling. I never cooked tuna on the grill before and was so surprised at how juicy and flavorful it was. This meal was simple, fast, colorful, delicious and nutritious! If you haven't tried the soyaki marinade from Trader Joe's, you must. It got a great write up in Real Simple magazine, I think it's going to be a staple in my summer grilling pantry. I said veggies a lot in this post.
