Bit of Food Porn

This is the watermelon, mint and feta salad from Wednesday night. I drizzled it with a bit of tangy mustard herb vinaigrette before serving it as a first course. It is a MUST TRY! The flavors and textures are a revelation. The sweet, juicy and crisp watermelon with the soft, delicate mint leaves mingling with the sharp and salty tang of light feta (Trader Joe's light feta is awesome.) It's the most simple of plates with an amazing head satisfying payoff.

  1. What timing on this recipe! Thank you so much, as I have this big hunk of watermelon, left over from family potluck and wondering what to do with it. Other than simply let the children devour it in one go.
And I've got lots of mint in the garden. I'll try it tonight and let you know what the family thinks.
    Love your blog!^_^

  2. Thanks for stopping by, Amy. Enjoy the salad, it is absolutely delectable. If you have any thyme and chives in the garden, add them to the dressing for extra zing.
