Meatless Monday

Take a look at that beauty! Prepping those wheat berries in advance let me throw this gorgeous salad together in just a few minutes. Of course, I had to have a little nibble to check the seasoning and ohmygosh, it is so yummy! I'll grill up some whole wheat pita and a delicious and nutritious dinner will be served.

  2. This does look tres yum. I'm curious, did you include the sugar that the recipe calls for? Or did you replace with Stevia? Curious if you've tried using Stevia or Purevia or one of those similar sugar subs in something like this, or if you would even bother, or leave the sugar component out completely?

  3. I didn't follow the recipe in the end. I made up a lemon Dijon mustard vinagrette (which does have a teaspoon of raw honey whisked in) and then just tossed together the wheat berries, red onions, tomatoes, cucumbers, parsley and goat cheese. No sugar other than the touch of honey in the dressing.
