Banana Custard Oats

Reader Zahirah asked about Banana Custard Oats. It's a delicious and very satisfying breakfast with great staying power because of the perfect balance of good fats, good carbs and lean protein.

I was turned on to them by Lori at Finding Radiance. Click here to read her method of making them, along with many other nice oatmeal variations. I make my BCO a bit differently. I like my bananas under-ripe to just ripe (I save the super ripe ones for Rob's breakfast muffins) so I dice the banana rather than mash it.

I put 1.25 cups of water with my diced banana into a small pot with a healthy shake of cinnamon or Penzey's cake spice and bring that to a boil. You can use milk or almond milk if you want it creamier. Sometimes I do that. Once the mixture is boiling, I lower the heat and stir in 40 grams of Country Choice multigrain hot cereal. I bring it to a simmer, stirring occasionally. In the meantime, I crack two whole eggs and whisk them up really well. Once my oatmeal banana mixture is cooked to my taste (I like it thick but with some texture,) I turn off the heat and slowly whisk in the beaten eggs. I keep whisking until the mixture gets all puffed up and custardy, just a minute or so. There is plenty of residual heat in the pan to cook the eggs.

It sounds weird but it's so tasty and I swear it expands in my stomach, keeping my satisfied a lot longer than other breakfasts.

The wording in both the magazine and on the website is ambiguous. The strength moves were supposed to be done in 20 minutes. I wasn't sure if I was supposed to do two or three sets of just one group or both. So I ended up doing group A twice then group B twice. It took me over 30 minutes to complete this. I had to add a short rest between sets because there isn't any indicated.

Despite the ambiguous explanation, the workout was quite challenging and I didn't have the steam to take on a 45 minute incline walk (as indicated) after finishing. So I got on the treadmill and did a quick mile. This is a good thing, a real challenge to work on; building up my endurance while maintaining strength.

If you are just starting out at the gym and want to give strength training a try, download these moves and give it a go. The lunge to squat was a good one.
Stand with feet hip-width apart, a weight in each hand. Step left leg forward into a lunge, thigh parallel to floor, right heel lifted (as shown). Return to start. Do a squat. Then step right leg into a lunge; return to start and squat for one rep. Do 10 reps.
Quick food rundown~Breakfast parfait, similar to this one from the plan...

Greek Yogurt Parfait
Mix 1 cup nonfat plain Greek yogurt with 1/4 cup pomegranate seeds, 1/4 cup strawberries, 1/4 cup blueberries, 2 tbsp chopped walnuts. Drizzle with 1 tbsp honey.
368 calories, 11 g fat (1.3 g saturated), 54.4 g carbs, 4.4 g fiber, 17.6 g protein

My version was 6 ounces Greek yogurt, 6 ounces of fresh raspberries, a sprinkle of cinnamon and 15 grams of chopped walnuts for about 280 calories.


I met my friend Tracy for coffee (thanks for the gorgeous birthday flowers, lovey!) and had a skinny latte with a 1/2 pump of pumpkin spice for about 100 calories.


Lunch was a repeat of the goat cheese muffin with the spinach and tomato soup. I used less cheese, more spinach and had baby carrots in place of the tomato for 390 calories. I'm going to be making my veggie juice shortly.

I haven't decided on my snack, perhaps an apple with cashew butter, but dinner is going to be from the September Cooking Light: Lamb and Turkey Pita Burgers which will be around 420 calories and enough leftovers for lunch later in the week! I will let you know how this recipe turns out.

Self Goal Challenge: Days 1 and 2

Day 1, Monday~
I was not hungry when I woke up so I just went straight to the gym. After a warm up and light stretching, I did 20 minutes of strength training (3 sets each of cable squat to row, push ups and ab floor work.) Then it was on to my first magazine workout, Cardio 2, the fat eraser on the elliptical. 30 minutes of varying intervals and it was awesome. I worked up quite the sweat.

Breakfast: banana custard oats for 369 calories and a big mug of genmaicha green tea with 1 packet of stevia.

Lunch: 1 chicken apple sausage (leftover from Sunday dinner) with apple cabbage cole slaw and homemade dressing for 296 calories

Snack: 1 slice of raisin Ezekial toast with almond butter (one serving weighed), it's really important to weigh energy dense foodstuffs like nuts and nut butters, they are so yummy and so easy to overdo.

Supper: (at work) Kashi sweet and sour chicken frozen meal, steamed broccoli, an crunchy apple and a 6 ounce cuppy of Fage 0% Greek yogurt for 538 calories

Treat: (at work) Kashi pumpkin flax crunchy granola bar for 170 calories

Water: 2 liters

Total calories: 1643

Random thoughts~ The photo of the fitness model on the elliptical trainer is a bit much. It would be nice to see real women working out in the pages of fitness magazines, not just fitness models.

I'm not keen on how fitness magazines like to throw around words like "sculpt" and "tone" when referring to muscles. These are myths that are totally busted by New Rules of Lifting for Women. Toning is what you do to your hair after your bleach it and sculpting is what Michelangelo did with his David.

Day 2, Tuesday~
I worked last night so I slept in, which was nice. I got up and made breakfast, banana custard oats again for 362 calories. 10 calories less than the same breakfast yesterday. That's because when you weigh your food you get a very accurate calorie count. Then I went food shopping.

First program lunch: Spicy Tomato Soup and Goat Cheese Sandwich

Heat 2 cups low-sodium tomato soup in a microwave; add 1 cup fresh spinach leaves, a few drops of your favorite hot sauce. Top 1 whole-grain English muffin with 2 oz herbed goat cheese and 1/2 tomato, sliced.
449 calories, 14.8 g fat (8.9 g saturated), 61.1 g carbs, 8.2 g fiber, 21.1 g protein

It did not breakdown exactly as written. If bought Amy's organic cream of tomato soup, at 110 calories per 1 cup serving. Had I eaten the whole can my lunch would have come in at 520 calories. I ate a whole tomato, 1 cup of soup + 1 cup of spinach seasoned with aleppo pepper, the toasted muffing with 2 ounces of plain goat cheese for a total of 420 calories. It was delicious and satisfying, if a little salty. I'm surprised the sodium content of each recipe isn't listed, I think that's quite an important thing to look at when eating healthfully.

My workout: It's an impossibly beautiful day, so I hit the neighborhood for a 45 minute walk, I moved fast with long strides and pumped my arms. It's hard to call it a workout when it's such a pleasure to be outside on such a picture perfect early fall day.

Snack: Crisp and sweet Jazz apple with 1 tbs of cashew butter for 168 calories.

For dinner I'm making baked, lightly breaded turbot and a minted pea puree for 480 calories and I'll have enough calories for an extra snack or treat after dinner and I'll be right at 1600 calories for the day.

Water~7 cups so far, but it's only just gone 4pm.

I'm tired and bit sore from yesterday's strength training but I've not been hungry and feel pretty good overall. I won't be having such a specific diary for every day of the month, I don't want to write them and I'm sure you don't want to read them. But I will have them periodically along with "Reader's Digest" versions throughout the month highlighting the program recipes and workouts.

Jiggity Jig and a Look to Next Week

We're back at home and as much as I hated to leave Hilton Head Island, there is nothing quite like a great night's sleep in one's own bed. It was a fantastic vacation, one that Rob and I will reminisce happily about until we're take off on our next adventure.

But now it's back to reality and reality is that I've put on 5 pounds while away. It's quite easy to do that while eating in restaurants for so many days in a row. But some is bloat and we were very active. I ate mindfully, careful to stop eating when I was full. Rob and I sometime split meals or plates went back with leftovers on them. I like to see that some habits are really starting to stick.

As I mentioned in an earlier post, I'm going to do a one-month fitness and eating plan that was featured in the September issue of Self magazine. I'm going to follow the plan pretty much as written but with a few caveats. I'm going to have my vegetable juice most days, because unless I'm away from home on vacation, juicing is non-negotiable. I'm going to swap in some of the "at home" workouts, mainly the outdoor walks because when the weather is nice I need to be outside.

I'm going to try out the recipes, post photos and review them as I go along as well as reviews of the workouts. I'll post how I'm feeling and how "doable" the plan is. I won't be weighing in until I complete the program in 4 weeks, which will be on Sunday, October 24th. I'm quite excited to actually be taking on this project.

Two Roberts, One Amazing Meal

Riding 12 miles on a bike causes some fatigue that I'm not used to, so the thought of dinner and a show at 8pm last evening was a little overwhelming. At the last minute we changed our late Jazz Corner dinner reservation to an early one at Robert Irvine EAT!

I asked Rob if he thought we might have a celebrity chef sighting in our near future as we set out to have dinner...

Never underestimate the power saying things out loud!

We arrived quite early and the place was pretty empty. Chef Irvine was just heading out to have his birthday dinner (his is on Friday) with his wife and kids, but the gracious host spent some time chatting us up and he and Rob spoke a bit about their native England. They talked about where they grew up (in towns in close proximity to one another) and of course about how awesome their shared first name is. And how, with all the people he meets in 300 days a year on the road, he had never met anyone named Andra and was curious out the origins of my name. Surreal!

We didn't want to keep the chef from his family date but he sent us a glass of birthday Champagne before he said his goodbyes.


It was an "impossible" dinner; strawberry-dragon fruit mojitos, house made bread with spicy olive oil, she crab soup, house made gnocchi, fillet of beef, lobster mac and cheese, white chocolate rice crispy cheesecake and some very nice wine. The service was excellent and a good time was had by all.

Birthday Bikes, Bagels and Cupcakes


We just made it back after a morning spent bike riding. After not having been on a bike since 8th grade, I finally know what the old adage "it's just like riding a bike" means, because you really don't forget.

Hilton Head Island is very bike friendly with many miles of beaches and bike paths to ride along. We set off at 9am and it was SO MUCH FUN! I struggled a little toward the end, but all those trips to the gym doing lunges, squats and plank really paid off.

We stopped at Island Bagel Co. for bagels and cream cheese and liquid refreshment. Rob had coffee, I had half sweet/half unsweetened iced tea.

We carried on riding around taking in the sights, until we arrived at our next destination...

Rob did a fab job filming me with his Blackberry in one hand, steering his bike with the other. He's awesome! It's tough riding on the sand, but the view is amazing and that sea air is like no other. Including stops, we rode about 4 hours and 15 minutes. We didn't have an odometer but I mapped the route using mapmyride.com and we biked 12 miles. I can't even believe it!

We're back at the resort and are heading out for a soak in the hot tub, my glutes and quads really need it. I now know what "saddle sore" means. :)

Footprints in the Sand

A walk on the beach, one of my greatest pleasures. Having grown up in New England, I've spent many hours of pure joy walking along the shore of the Atlantic Ocean. But I let my health suffer, my weight get control of me and two years ago this very week, I couldn't walk even 10 yards with my beloved husband down a gorgeous stretch of beach in Puerto Rico.

But NO MORE! I made the change and it was worth every step of the nearly 10,000 we took along Palmetto Dunes beach this morning. It was heavenly!


Don't let your issues with food stand in the way of what you truly love to do, whether it's walking on the beach, playing with your children in the park, skiing with friends or playing tennis with your significant other. Life is too short, too precious to watch from the sidelines. Don't waste another minute being a prisoner of your body. Make the change now so you won't miss another minute of all the joy that an active life has to offer.

Savannah Serendipity

Warning~ Long post with lots of photos ahead...

SATURDAY NIGHT

We ended up at The Distillery which is a fantastic pub without the whole fake English or Irish pub gimmick, which always falls flat for my husband the expat.


Rob had fish and chips *gasp* but I opted to wait for dessert once I got a load of their signature dessert...


If you click on the pic to enlarge it, you will see why I am making that face. The face that says, "Something wicked this way comes." But we'll get to that after drinks.

The beer menu is vast with some really fun selections like Rogue Dead Guy, Purple Haze, Gamma Ray, Back in Black, Delirium Tremens and Golden Monkey. They do one-ounce samples of whatever catches your fancy. Right up my alley! I had a sample of Gamma Ray but opted for Punkin Ale with a cinnamon-sugar rim.


Like drinking liquid autumn! Rob had Delirium Tremens then Gamma Ray and I asked for a sample of Rogue Dead Guy.

Rob said he knows how it got its name. *ick*


I had a half pour of Purple Haze, which has a beautiful raspberry top note. We really kicked back, had a good long laugh and then ordered dessert. The next photos speak for themselves...







Needless to say, we ate the whole thing.

SUNDAY

We set out on a long leisurely walk toward Forsyth Park. We stopped on all the squares along the way. The Historic District of Savannah is simply lovely but it's also a little quirky which really appeals to me. Outside a local pet shop called Whiskers, a refreshment center describing the "drink of the day."



This is the spot made famous by a character name Forest Gump. The bench is long gone but the scent chocolate of still lingers in the imagination.



We made it to the gorgeous fountain at Forsyth Park and we're hungry by this point. Now things start to get weird (again.) Across from the park is the Mansion on Forsyth Park which houses a restaurant that I've always wanted to try, the famous 700 Drayton. I was delighted when Rob spotted the sign.


No sooner had we sat down and took the first sips of our Georgia Peach Sweet Tea did the fire alarm sound and we were evacuated. Good thing our food hadn't come yet considering we ordered *wait for it* Crab and Cheddar Biscuit Benedict (poached eggs, grilled country ham, petite crab cake, hollandaise, hash brown potatoes) *drool*


So with heavy hearts and empty stomachs we headed off to find another place to eat and there it was...

Squee, the restaurant that I wanted to eat at yesterday! Funny how things work out.

I checked the pedometer when we sat down...



I had the crab and mango tartine with avocado on house made brioche.

Rob had an warm ham and cheese with apple slices on house made ciabatta.

A nutella filled macaron for dessert. Like nothing I've ever tasted...

An excellent lunch, worth the wait. We headed back to river street and I couldn't resist a stroll through the Savannah Candy Kitchen, which smells so good they should bottle it.

Savannah Saturday

Such a pretty morning for a road trip. We stopped for coffee on the way out of town and after a pleasant drive singing along with Queen we arrived in Savannah at 11:30am. The required driving photo...

We got a nice early check-in then it got little weird. We went to check out the room and it smelled beyond funky. I have a super sensitive nose (I always travel with scented candles and incense for this reason) but when Rob, who is hard of smelling, said how awful it smelled I knew there would be a trip to guest services in our near future. Gerry, the manager on duty was wonderful, had us moved to really nice, good smelling room and offered to refund our reward points we used for the stay. Woohoo!

We got a late start for lunch and found the place I really wanted to eat at mobbed and couldn't get a table so we grabbed a quick burger a Fudd's, not what I wanted but whaddayagunnado?

Then we hit the Broughton Street shops, The City Market, then down to walk the beside along the river. I popped into an antique shop along the way and spied the most gorgeous set of six Italian glass flutes. I'm such a sucker for unique glassware and I would have kicked myself all the way home if I hadn't grabbed them.

Rob had said I could chose my birthday pressie on this trip but this time the pressie chose me.

Now we are back in the room cooling off, it's 91 degrees presently. The forecast for tonight is 67 and clear, so we'll be back out strolling the city and going somewhere for dinner and drinks. Where, who knows? but I promise some food and cocktail porn.

My Next Project

I know I promised a post about strength training but I just can't get my head around it at the moment. My body may be physically here going through the motions of life; work, workouts, chores, etc. but my mind is already strolling through Troupe Square in the moonlight.

I should be cleaning the house right now but I just spent an hour in my closet trying on vacation outfits for my imaginary friends Tim Gunn and Carson Kressley. I can't even begin to describe how good it feels to have nice, normal sized clothing that fits well and looks pretty and that I'm excited to wear. Fat Andra had terrible stress about packing for vacation. Nothing ever looks right when you feel uncomfortable in your own skin. I don't ever want to experience that feeling again! I'm going to end up over packing on clothes and shoes, but who cares? It's so awesome to be able to have that luxury.

I really must get back to my to-do list but I want to tell you a little bit about my next project. When we return, I'm going to do something a little different. Have you ever actually followed a fitness and/or eating plan that you've read about in a fitness magazine? I haven't. They always seem too physically demanding combined with way too few calories, which does not fit in to my idea of a happy life.

But an article in the September issue of Self magazine called "You Minus 8" caught my eye. The eating plan is 3 meals, 1 snack and 1 treat for a total of 1600 calories plus a varied workout plan designed to shave off up to 8 pounds in 4 weeks. It looks like a totally doable plan and the menus look tasty, tasty enough to feed my husband. So, I'm going to follow the eating plan, do the workouts and blog about my experience during and the results after. What do you think? Care to join me? Read more about it at Self magazine's website.

Clean Bill of Health!

I had my annual physical the other week, Dr. Laurie was thrilled with my progress. I had blood drawn and just called the phone system to listen to the results.

Although my total cholesterol was good last year, my ratio wasn't as good as it could be. What a different a year makes! Not only did my lipid panel come back "excellent," my ratio is much better, I got my LDL down and my HDL up with textbook triglycerides. I just know that it's the consistent exercise that has helped me reach my goal.

I know the path I've chosen is very good for my health, but to see those numbers in black and white is so very satisfying.

Six More Sleeps

I can't believe it's been a year since Rob and I have been away, it seems like such a long time especially since we had four holidays away last year. We decided to lay low this year because of the new windows and the garden project which, by the way, yielded The World's Most Expensive Cucumber and not much else. But if I dwell on that I'll get upset.

We always go away for my birthday and this year is no exception. We have the house sitter all lined up and on Saturday morning we're taking this show on the road. We are heading to Savannah for the weekend, then spending the rest of the week at the Marriott on the beach in Hilton Head Island, SC. I can't wait for long walks on the beach!

I have a super busy week coming up, lots of work shifts, workouts and trip prep, so if it's quiet here, that's why. We'll be taking the laptop with us so I'll be doing a little travel blogging with piccies, food porn and reviews. I do have a half-written post about weight lifting with my New Rules wrap up that I'd like to get up this week, so I'll try to get that finished and posted.

I will leave you with a photo of the absolutely delectable and filling dinner salad we had the other night. Baby romaine herb salad, slivers of green onion, sweet and juicy red grapes tossed in homemade vinaigrette topped with thin slices of sirloin fillet, light gorgonzola crumbles and some tangy plum slices on the side. So good! It was inspired by this recipe in Cooking Light~Flank Steak Salad with Plums and Blue Cheese.

Whenever I get gloomy with the state of the world, I think about the arrivals gate at Heathrow Airport. General opinions starting to make out that we live in a world of hatred and greed, but I don't see that. It seems to me that love is everywhere. Often, it's not particularly dignified or newsworthy, but it's always there - fathers and sons, mothers and daughters, husbands and wives, boyfriends, girlfriends, old friends. When the planes hit the Twin Towers, as far as I know, none of the phone calls from the people on board were messages of hate or revenge - they were all messages of love. If you look for it, I've got a sneaking suspicion... love actually is all around.

Take some time today to hug your loved ones and tell them how much they mean to you. If they are far away, pick up the phone and call them. It's the perfect day to share some warm emotion with the people who mean most to you.

The Battle of the Bulge

That phrase always makes me chuckle...the battle of the bulge. But is that was it is really, the battle against fat, the battle against food?

No, it's not. I've learned that fat, food has little to do with it. It's a battle against my fat brain, my inner child who wants to be soothed, my own worst enemy, me. It's not about the Twinkies or M&M's but about my decision to eat them, too many and too often instead of focusing on what I really wanted or needed. The urge to bury, to avoid rather than deal, grow.

It's the choice I made, time and again, to stay in bed, stay on the computer, do *anything* other than what was best for my health and well being, which was put on my sneakers and go for a walk.

The choices and decisions that we act upon each and every day form who we are, who we will become. I'm choosing to be healthy and fit. What choice will you make?

80/20

I was flipping through Health magazine yesterday and these words caught my eye...

Follow the 80/20 rule. Eat quality foods (whole grains, lean protein, fruits and vegetables) 80% of the time rather than trying to be perfect.

Thunderbolt moment! Turns out it was an advertisement for Intel of all things but that doesn't make the statement any less valuable. The 80/20 strategy along with eliminating processed crap (if I'm going to indulge, it's going to be on something best quality and worth it) and getting daily physical activity, a healthy lifestyle is something that can be achieved and maintained.

Happy Sunday!

It's a gorgeous and quite cool late summer morning here in Marietta, GA. It was 57 degrees when we we woke up, it's 64 now with a high of 84 degrees in the forecast. Rob and I just finished a long walk and now the coffee is brewing. It's going to be a great weather day, perfect for sitting outside with a good book, later with a good glass of wine. For dinner, I'm roasting a farm chicken (I'm calling this one Sandra Lee) and serving it with a roasted summer vegetable panzanella. I love Sunday!

New Goodie: Cuisinart Mini-Prep Plus

Rob bought me a fancy Kitchen-Aid food processor for our anniversary last year. It had all the bells and whistles with nine-cup capacity and a four-cup mini bowl. It was everything I thought I had wanted at the time. After using a handful of times, I realized that it was poorly designed, the bowl was deep but the tube/hole that the blade inserted into was so short that it leaked every time I used it. Since I have a good chef's knife and a Kitchen-Aid stand mixer, I found that I was only using the mini-bowl so I returned it and bought this instead...



I have it in black and I LOVE IT! It's so light and small, easy to pull out and return to the cupboard, it doesn't take up much space and it's very easy to clean. It's got a 3 cup bowl and a super sharp blade. I don't use it to chop veggies but it makes the best pesto, perfect bread crumbs, grinds hard cheese in an instant. It's fast, powerful and does not leak!

If you need a food processor but think a big one will be too much machine or too pricey, try this little gem out. It's on the list of my favorite kitchen essentials. Which I'll post if anyone is interested, let me know.

Yes, folks, it's 9/02/10, so all the fans of Beverly Hills, 90210 are celebrating 90210 Day. I can't think of a better day to celebrate.

I've seen every episode many times, I'm almost 41 years old and still have a mad crush on Dylan McKay (and a girl crush on Valerie Malone, what? She's hot!) I still think that Steve Sanders is the "original TV douche" after which all others were modeled yet pale in comparison. It's one of my favorite shows of all time, just slightly edged out of the top spot by Star Trek: The Next Generation.

Gawker TV has clips of their top 9 favorite moments. My favorite of all time made the list. That would be the prom/graduation two-parter, most popularly know as "Donna Martin Graduates!" A few of my other faves are missing like The Color Me Badd (Donna Martin's mother is a dirty cheater) episode, Kelly joining the cult and Dylan saving David from the DEA.

Were you a fan of 90201? Who was your favorite character, favorite episode? Will you be tuning in to the Labor of Love marathon on Monday? I know I will, for at least a few episodes. Somewhere, a few miles from here, my husband just shivered with dread but has yet to find out why.

Happy 90210 Day, I hope it's as carefree and wonderful as the day that the gang graduated from West Beverly and gave the Hollywood sign that very special makeover. *tear*

Monthly Weigh-In, September 1st

It is September and I'm just so SQUEE! It's my favorite month, my birth month and the gateway to my absolute favorite time of the year. It's still quite warm here but the humidity is receding and the mornings and evenings are beginning to be mild and gorgeous for being outdoors. So excited!

I am bloated from the start of my period so weighing in at 178 is not much of a surprise. Still holding off 99 pounds of the 101 pounds I've lost. I hit my August fitness goals out of the park, I'm really pleased and proud of myself. The eating was a bit up and down, but I'm not perfect. Eating healthy isn't about perfection, it's about maintaining balance. I had tweeted a thought about maintenance earlier in the month and wanted to share it here.

Maintenance=drudgery, right? But it's not. Think about it, by doing a little bit of work (maintaining) you can avoid doing A LOT of work.

I'm just about finished with New Rules,a couple of workouts left. These final workouts have been challenging to say the least. I think they were designed by a warden of a Siberian gulag. OUCH!

I'm not really setting any specific goals for myself this month other than maintain balance, be more mindful at mealtimes and get in lots of walking. This weather is perfect for long morning walks. Walking is such a great workout, it's fun, cheap and easy (like me, hee hee) so get on your comfy shoes, step outside your front door and put one foot in front of the other.
